Peanut Butter Makes Everything Better

I made these cookies yesterday, mostly because I wanted to eat them. The second best part is that all the ingredients are pantry items, so no special trip to the store required. The best part is that they have a surprise in the middle! One thing I will say is if there are more than two people in your household, you might want to double the recipe.



Ingredients:

1 1/2 cups all-purpose flour
1/2 cup unsweetened cocoa powder
1/2 tsp. baking soda
1/2 cup butter, softened
1/2 cup granulated sugar
1/2 cup packed brown sugar
1/4 cup peanut butter
1 egg
1 tbsp. milk
1 tsp. vanilla


3/4 cup sifted powdered sugar
1/2 cup peanut butter



1. In a medium bowl combine flour, cocoa powder, and baking soda; set aside. In a large mixing bowl beat butter, granulated and brown sugar and 1/4 cup peanut butter with an electric mixer until combined. bean in egg, milk and vanilla until combined. Add flower mixture and beat until combined. Set aside.

2. For peanut butter filling, in a medium bowl stir together powdered sugar and 1/2 cup peanut butter until smooth (I used my hand to knead this dough until it was combined).

3. Scoop out chocolate dough into balls on cookie sheet and the flatten with the bottom of a glass or bowl. Scoop out peanut butter filling into balls about half the size the chocolate balls and place in the middle of each chocolate circle. fold the chocolate dough around the peanut butter dough until fully enclosed. Lightly flatten each cookie again with the bottom of the glass.

4. Bake at 350 degrees for 8 minutes.

5. Try not to eat yourself silly!

Nancy, yes I said pantry items. I'm pretty sure I picked that one up from Ina Garten. So you'd better make sure they're "really good" pantry items. :)

Mmm - those look delicious! Too bad I don't have cocoa, or I'd probably make them tomorrow. Maybe I'll borrow some from the neighbors...

Sorry I didn't go on that rainy day drive with you and Brian, you probably would have brought some of thses delicious looking cookies with you to eat along the way. I know I missed out. Now I'll have to try them for myself.
