For lunch today I had some tasty penne with homemade pomodoro sauce. This is a recipe I came up with after much trial and error. The orange juice might sound a little strange, but you don't taste orange, it just adds sweetness. And sorry for inexact measurements. What can I say, I'm my mother's daughter, and I don't measure things. Give it a try and let me know what you think!
Pomodoro Sauce
Ingredients:
1/2 sweet onion, chopped
2 cloves garlic, minced
1-2 tbsp olive oil
1 can tomato sauce (the small ones, I think they're 6 oz, but might be 8 oz)
1 can whole tomatoes (the big one, I think it's 32 oz)
Juice of one orange
About 1 tsp. pesto season or Italian season
About 1-2 tbsp. chicken bouillon
salt and pepper to taste
Saute the onion and garlic in the olive oil until soft and translucent. Add remaining ingredients and bring to a simmer. Puree mixture with hand blender (a regular blender will work if you don't have a hand blender, it's just more convenient). Serve over hot pasta with freshly grated Parmesan. Enjoy!

I've just been wondering what to make for dinner, I'm definitely going to have to try this, sounds yummy! Can you buy dry pesto spices?

My dry pesto spices are McCormmick (I think) I got them at Albertsons and it's a clear bottle with a green label and a black lid.
I think I'll just have to try this from the chef herself some day. I'm not much for culinary improvisation myself.
Sounds like you have been watching Every Day Italian to say that the orange juice provides sweetness. I heard once about a secret ingredient in such a sauce and it turned out to be grape jelly.
